The chef-owner of Indigo, one of Mumbai's best-known restaurants, Rahul Akerkar, says in an interview to the Daily News & Analysis that restaurateur will get a wider choice in wines because news players are entering the market. He doesn't see the competition, though, growing in the country's wine market. ( Editor's Note: That's disheartening because we are all banking on wine market proliferating with both choices and competition.)
The electrical engineer-turned-chef's other predictions are:
- Restaurants will have more focused wine lists and they'll offer greater depth - both horizontal and vertical.
- More cuisine-themed restaurants will open. Vietnamese and India's regional cuisine will gain increasing prominence. But low-cal food just won't work.
- International chains are here to stay. "Soon, Starbucks will come and do what they do everywhere - take over!" Akerkar says.
He's very critical, and justifiably so, about the food and beverage industry. "The supply chain management needs to change and there has to be standardisation of raw products, better accessibility and deliverability. It's all very ad-hoc now. The big chefs will not come in unless all of this changes," he says.
